Smooth clams belong to the family of molluscs of the Veneridae, the same as the carpet shells, so their nutritional values are very similar to those of the ""big sisters"", low in fats and proteins, and abundant of Vitamin A.

Smooth clams are bivalve molluscs with an almost oval shape with a smooth, glossy surface and crossed by subtle concentric striations, while no radial elements are visible.
Italian caught smooth clams have a reddish-pink colour with concentric bands and darker radials, while inside is white porcelain. The average length of our smooth clams is 60-70 mm, but they can reach up to 100 mm and weighs 210 grams.
Italian smooth clams prefer to live in sandy and rubble sediments ranging from 0 to 20 meters deep. The highest densities are registered in the Northern Adriatic, at the seabed rises.
To recognize fresh smooth clams you should check if their valves are closed, this is a sign that the clam is still alive, making sure they respond to external stimulation.
